Zucchini Brownies

If you’re like me, you’re still trying to use up the overabundance of frozen shredded zucchini from last gardening season. This recipe is sure to help!

Zucchini Brownies:

1/2 cup sugar

1/2 cup oil 1 tsp. salt

1 1/2 tsp. baking soda

2 tsp. vanilla

1/2 cup cocoa

2 cups flour

2 cups grated zucchini

1/2 cup chopped nuts(optional)

Mix ingredients, one at a time, stirring well after each.

Bake in preheated oven at 350* for 35-40 min. in greased 9×13 pan.

It’s that simple, really. Now you can top them with powdered sugar, leave them plain, top with ice cream, or my favorite-whip up this amazing chocolate butter frosting:

Chocolate Butter Frosting:

6 T melted butter

4 1/2- 4 3/4 cups powdered sugar

1/4 cup milk 1 1/2 tsp. vanilla

4 T cocoa Mix all ingredients together with mixer.

Add more powdered sugar and milk until frosting consistancy is met.

Frost brownies, think of me with kind thoughts with every bite and be surprised if they last more than a day!
