Muffin Mania

My friend, Melissa, has motivated me to start making muffins a go-to easy breakfast.  I don’t know why I haven’t made muffins more often.  They are seriously so quick, easy and frugal to make.  I made 6 batches of them in just a few hours one day last week.  Now we have a great selection in the freezer for quick(and healthy) breakfasts and snacks.  I didn’t have to go out and buy any of the ingredients either.  I had everything I needed on hand already.

Strawberry muffins fresh out of the oven and 5 dozen blueberry, apple-cinnamon, and zucchini-chocolate chip muffins ready for the freezer, all in a matter of a few hours.

Here are the basic recipes I used.  I did a lot of substituting of things like honey for sugar and 1/2 whole wheat flour.  Enjoy!

Banana Crumb Muffins-didn’t get to these that day but they are on my list for next time!
